Fixed costs are the trap on self-hosted stores: at 30 orders a month the same overhead is five times heavier per order than at 150.

Why is overhead allocation so important here?
Because there is no commission, your platform cost is almost entirely fixed. Fixed costs per order fall as volume rises, so the same store can be unprofitable at low volume and healthy at higher volume with identical pricing.
Which payment rate should I use?
Use your actual provider rate. The default reflects a common published card rate, but regional cards, currency conversion and premium cards all change it.
